Sergei Bubka, Pole Vaulter.

Among winning a gold in the olympics, he broke the outdoor record for the pole vault 35 times! The indoor record 15 times.
He has held the record for the highest vault for 12 years with a 20 foot 1 1/4" Vault.

If you are going for just gold medals then phelps.
